5-Spice Pork in Satay Sauce

Seems best with either rice or in a sandwich with lettuce.

Ingredients

  • 1 kg pork shoulder | cut into cubes or strips

  • 30 g light brown sugar

  • 1.5 tbsp 5-spice

  • 3 tbsp dark soy sauce

  • 0.5 tbsp white pepper |||

  • 2 cloves garlic | minced

  • 0.5 tsp medium curry powder

  • 2 tbsp peanut butter

  • 1 tbsp soy sauce

  • 1 tbsp oyster/mushroom sauce

  • 1 tsp miso paste

  • 1 tsp sugar

  • 1 cube vegetable stock

  • 0.5 tsp sesame oil

  • 0.5 tsp chili flakes

  • 1 tsp cornflour | mixed with 2 tsp water as slurry |||

  • 2 peppers

  • 2 onion

  • 2 courgette (did not have)

Directions

  • The pork: pan-fry the pork in soy, brown sugar, 5-spice and white pepper. Once done, set aside.

  • The satay sauce: Gently fry garlic

  • Stir in curry powder

  • Add peanut butter, soy sauce, oyster/mushroom sauce, miso paste, sugar, veg stock cube, sesame oil.

  • Simmer 2~3 min.

  • Add chili flakes and the slurry

  • The assembly: Stir-fry onion, peppers, courgette.

  • Add the pork, toss until heated.

  • Pour in satay sauce, stir until coated.
