Curry: Red Masala Paste

Ingredients

  • 50 g red chillies

  • 2 tbsp coriander seeds

  • 1 tbsp cumin

  • 1 tbsp black pepper

  • 1 tsp ginger

  • 1 tsp garlic

  • 1 tsp salt

  • 1 tsp sugar

  • 3 cloves

  • 1 stick cinnamon

  • 1 onion (big)

  • a small ball of tamarind or tamarind paste

  • a small amount of vinegar

Directions

  • Grind all of the above ingredients with a little vinegar to make a smooth paste.

  • Do not add water.

  • Red masala is ready and can be stored in the refrigerator for a month or more.
