Curry: Red Masala Paste

Ingredients
50 g red chillies
2 tbsp coriander seeds
1 tbsp cumin
1 tbsp black pepper
1 tsp ginger
1 tsp garlic
1 tsp salt
1 tsp sugar
3 cloves
1 stick cinnamon
1 onion (big)
a small ball of tamarind or tamarind paste
a small amount of vinegar
Directions
Grind all of the above ingredients with a little vinegar to make a smooth paste.
Do not add water.
Red masala is ready and can be stored in the refrigerator for a month or more.
