Mābō Dōfu

shoyu: 15~20 circles of the frying pan mirin: ‘1 wooden spoon full’

Ingredients

  • 6 tsp toban-djan

  • 1 tbsp mirin

  • shōyu

  • 1 tōfu

  • 2 celery

  • 2 carrots

  • 1 red pepper

  • fince

  • olive oil

  • salt

  • pepper

Directions

  • Heat frying pan. Olive oil → frying pan.

  • Fry vegetables. Continuously stir to avoid burning.

  • Add mince.

  • Add toban-djan, mirin, shōyu, salt and pepper. Mix.

  • As required, add water to keep the sauce ‘juicy’ and not sticking to the bottom of the pan (as this leads to burning).

  • Fry further and add tōfu cubes.

  • Fry further. Serve with rice.
