Shakshouka (Oli edition)

One can cover the frying pan with a baking tray if one does not have a lid.

Ingredients

  • 2 tbsp olive oil

  • 1 onion | diced

  • 1 sweet pepper

  • salt

  • 1 tsp cumin

  • 0.5 tsp turmeric

  • 0.5 tsp paprika

  • 0.25 tsp cayenne pepper

  • black pepper

  • 800 g crushed tomatoes (2 tins)

  • 180 ml water

  • 6 eggs

Directions

  • Add olive oil to a wok on medium-high heat.

  • Add onion, salt and the sweet pepper, then cook for 5 min.

  • Add spices.

  • Cook for 2 min.

  • Add the tinned tomatoes and crush with wooden spoon if necessary. Add water if necessary.

  • Cover and leave on medium-low heat for 15 min.

  • Crack in 6 eggs, making holes for them using a wooden spoon, so that the eggs poach within the tomatoes.

  • Cover and cook until eggs are done.
