Shakshouka (Oli edition)
One can cover the frying pan with a baking tray if one does not have a lid.
Ingredients
2 tbsp olive oil
1 onion | diced
1 sweet pepper
salt
1 tsp cumin
0.5 tsp turmeric
0.5 tsp paprika
0.25 tsp cayenne pepper
black pepper
800 g crushed tomatoes (2 tins)
180 ml water
6 eggs
Directions
Add olive oil to a wok on medium-high heat.
Add onion, salt and the sweet pepper, then cook for 5 min.
Add spices.
Cook for 2 min.
Add the tinned tomatoes and crush with wooden spoon if necessary. Add water if necessary.
Cover and leave on medium-low heat for 15 min.
Crack in 6 eggs, making holes for them using a wooden spoon, so that the eggs poach within the tomatoes.
Cover and cook until eggs are done.
